1 1/2 c flour1 c whole wheat pastry flour1 c sugar1/4 c cocoa powder1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt1 tsp cinnamon1 c buttermilk2 c shredded unpeeled zucchini3 egg whites2 tsp vanilla extract1/4 c chopped walnuts
Combine fours, sugar, cocoa, baking powder, baking soda, salt, and cinnamon, and stir to mix well. Stir in the buttermilk, zucchini, and egg whites, and vanilla extract. Fold in the walnuts.
Fill muffin tin (I use paper liners) bake at 350 for 12-15 mins or until toothpick inserted in center comes out clean.
