Tortilla Soup

Ingredients
1 onion - chopped or minced1 red bell pepper - chopped1 orange bell pepper - chopped1 yellow bell pepper - chopped1.5 litres of Fat Free chicken broth 16 oz (2 cups) cooked skinless boneless chicken breast - chopped into (large) bite sized chunks1 tsp garlic1 cup Red enchiladas sauce (this recipes uses mine "Joy's Enchiladas Sauce"2 cup green salsa or cilantro salsa - if using just a green salsa add 1.5 c chopped fresh cilantro15 oz pumpkin puree1 can black beans drained and rinsed
Directions
Makes 16 servings (1 cup).

Directions:
In a large pot, bring broth to a boil. Add onion, and simmer for about 5 minutes, until slightly tender.

Add garlic, enchilada sauce, salsa and pumpkin. Once soup returns to a low boil, add chicken and corn (and cilantro if applicable) and black beans, and mix well. Cook for an additional 3 - 5 minutes, until soup is heated throughout.

you can optionally add toasted Tortilla pieces (not included) to soup before serving
