French Bread Pizza Bites

1 loaf wheat French bread1/4 cup plus 1 tsp olive oil4 garlic cloves, pressed1 small onion2 cups green pepper1 can (14.5 oz) petite diced tomatoes, drained1/2 cup Mozzarella cheese, shredded1/4 cups Parmesan cheese
Preheat oven to 450F. Slice bread in half horizontally; place cut side up on pan. Combine 1/4 cup olive oil and two cloves of pressed garlic. Brush oil mixture over cut sides of bread.
Chop onion. Dice bell pepper. Add remaining 1 tsp oil to a pan and heat over medium-high heat 1-3 minutes or until shimmering. Add onion and pepper. Cook and stir 2-3 minutes or until onion is tender. Press remaining garlic into pan; cook 1-2 minutes or until fragrant. Combine onion mixture and drained tomatoes; mix well.
Sprinkle mozzarella cheese on both halves of the bread. Divide tomato mixture evenly over cheese; add parmesan cheese on top. Bake 15-17 minutes or until cheese is golden brown. Remove from oven. Cut pizzas into a total of 24 slices.
