Vegetable Saute

Ingredients
1 small yam 2 med parsnips,1 med turnip2 med carrots1 medium onion2 med stalks celerynonstick spray
Directions
Peel and slice all vegetables. Spray large skillet with nonstick spray. Add vegetables and saute on low heat for 25 minutes stirring frequently, then turn heat up at end for 5 minutes to finish browning vegetables. Salt to taste if desired.

Divide into 2 equal portions

Can be used as a main dish for vegan diets.
