sausage-less stuffed manicotti

Ingredients
barilla manicotti, 7 shells (117 grams dry)spinach, frozen, 16 oz packageegg white, fresh, 2 largeprecious low fat ricotta cheese, 1 cuptrader joe's lite shredded mozzarella cheese, 1 cup (approximately 3.5 oz)trader joe's italian sausage-less sausage, 2 servinggourmet garden basil herb blend, 1 tspgarlic, 2 cloves365 organic marinara sauce eggplant, 1.5 cup
Directions
preheat oven to 350 degrees.

cook pasta according to directions. drain and set aside.

defrost spinach in microwave and remove excess moisture.
add egg whites, ricotta and mozzarella cheeses.
fold in sausage, minced garlic and basil.
combine all ingredients well.

stuff 7 pasta shells equally with mixture.
arrange in baking dish.
pour marinara sauce over shells.

bake for 25-30 minutes.
