Slow Cooker White Chicken Chili

1 1/4 lbs boneless skinless chicken2 (15 ounce) cans white (cannellini) beans1 (15 ounce) can hominy or 1 (15 ounce) can white corn1 red pepper, diced 1 medium onion, diced 1 envelope taco seasoning (I used low sodium)1 (4 1/2 ounce) can of chopped green chilies1 (10 3/4 ounce) can condensed cheddar cheese2 cups chicken stockLight sour cream (optional) chopped green onion (optional) monterey jack or cheddar cheese (optional)
1. Place chicken in a 4 quart slow cooker.
2. Top with beans, corn, onions, and red pepper.
3. In a medium bowl, combine taco seasoning, chilies, condensed soup, and chicken stock. Pour over top of ingredients in the crock pot.
4. Cover and cook on low for 8 to 10 hours.
5. Before serving, remove chicken and pull apart, then place back in slow cooker
6. Serve topped with sour cream, cheese, and green onions if desired (HIGHLY recommended!).
Makes 6 - 8 servings
