Allergy Free Brownies

1 ripe banana1/2 c vegetable oil1 1/2 c apple sauce1 c potato flour1 c rice flour2 c white sugar1/2 c unsweetened cocoa1/2 tsp baking soda1/2 tsp cream of tartar1 1/2 tsp salt
Makes 24 generous size pieces
Preheat oven to 325.
Grease 9 x 13 baking dish
In a large bowl, mix together potato flour, rice flour, sugar, cocoa powder, baking soda, cream of tartar, and salt.
Blend together banana, apple sauce and oil in a separate bowl.
Stir the banana mixture into the dry ingrediants adn mix until well blended.
Spread evenly in the bottom of the prepared pan.
Bake for 20 to 25 minutes until they appear dry on top.
Cool completely and cut into squares.
