Beef Enchiladas

Ingredients
1 lb. ground beef1 (12 oz.) bottle Trader Joe's Enchilada Sauce1.5 cups of Mexican Shredded Cheese6 Whole Wheat Tortillas1 cup diced red onion1 can Rotel Tomatoes and Chilis0.5 cup of sour cream
Directions
Cook ground beef. Drain fat. Add diced onion to meat and cook about 3-4 minutes or until soft. Add 3/4 cup of enchilada sauce to meat and onions. Add 1/2 sour cream to mixture. Spread 3 Tbsp. of remaining enchilada sauce into casserole dish. Spoon filling into tortillas making 6 enchiladas and place in casserole dish. Cover with rest of enchilada sauce. Top with cheese. Bake @ 375 for 25 minutes. Top with additional sour cream and guacamole.
