Crock Pot Beef Stew with Quinoa

Ingredients
* Vegetable Oil, 1 tbsp* Beef (stew beef), 1 lbs.* Quinoa, 1 cup * Baby Carrots,2 cups* Onions, 1 cup, chopped * Pumpkin Pie spice, 1 tsp * Beef stock, reduced sodium, 32 oz.* Celery, 2 stalks, chopped* Ground black pepper, 1/2 tsp* Dried Parsley, 1/2 tsp
Directions
Place the vegetable oil and then beef in the crock pot, then place the rest of the ingredients in. Stir well, then cook on low for 9-10 hours (or high for 4-5 hours).
