Tomato Basil Omelet

Ingredients
1/2 cup shredded cheddar cheese1/2 cup fetta cheese1 cup chopped tomatos1 Tbs Cilantro2 Tbs Basil4 eggs4 Tbs water
Directions
mix water & eggs and pour into your skillet.

stir gently until about 1/3 cooked. let cook remainder with out stirring.

When eggs are just about finished add all tomatoes, cheese, cilantro & Basil

fold egg over filling. cook till cheese is melted.
serve immediately.

    I skipped the cheese and used 3 eggs. Then I just added the cilantro and basil to taste and one roma chopped tomato. Wonderful. - 3/11/11
