stuffed portobella mushrooms

Ingredients
Portabella Mushrooms, 225 grams (about 3 mushrooms)*asda green lentils in water (drained weight of tin - 265g), 100 gram(s) *Asda Passata, 100 gram(s) Onions, raw, 0.5 medium (2-1/2" dia) *ASDA Smartprice Sweetcorn, 100 gram(s) Red Ripe Tomatoes, 1 medium whole (2-3/5" dia)Mori-Nu, Tofu, silken, soft, 100 grams *Cheese - Extra Mature Chedda Cheese, ASDA smart price, 50 gram(s) 1 tsp garlic, chili flakes, salt pepper,rosemary, parsley, oregano, basil to taste1tbsp balsamic vinegar
Directions
chop onion, tomato, tofu
grate cheese
add all ingredients (apart from mushrooms and cheese) in frying pan (i start off with browning onion and mushroom stems, then I add all other ingredients)
cook until all tender and thickened into a nice sauce

scoop out mushrooms

Fill mushrooms with sauce, top with grated cheese and put in the oven for 15-20 min at 200C or until brown. Enjoy with a side of brown rice, bulgur or quinoa. Add left over sauce.
