Sausage and Cheese Grits casserole

4 cups water1 cup enriched quick grits4 eggs lightly beaten 1 lb pork sausage, browned1 1/2 cups shredded cheddar cheese 1 cup milk 1/4 cup butter
Preheat oven to 350 Grease a 3 qt baking dish and set aside. Bring the water to a boil in a medium saucepan. Slowly stir in the grits and cook 4 to5 minutes, stirring occasionally. Remove the pot from the heat. Stir a small amount of the grits mixture into the eggs, then pour that mixture back into the pot. Add the sausage, 1 cup of cheese, milk, and butter. Blend well. Pour mixture into baking dish. Sprinkle the remainder of the cheese on top. Bake for 1 hour, or until the cheese is golden brown. Allow your casserole to cool for 10 minutes before serving.
