Light Veggie Cream Cheese

16 oz. of Neufchatel Cheese6-8 scallions chopped10 baby carrots chopped 1/2 cup of chopped green pepper
Directions
chop vegetables as small as possible, or just throw them in a food processor, and then stir them into the cheese. You may have to let the cheese sit out for a little while to soften it up.
