crock pot fava bean ragu

Ingredients
16 oz dried fava beans7 medium carrots sliced4 ribs of celery sliced2 large onions6 medium tomatoes or 2 16oz cans whole tomatoes2 Tbs nutritional yeast1/4 tsp smoked paprika1 tsp salt1 tsp crushed red pepper flakes
Directions
place dried fava beans in 2 cup vegetable broth in crock pot and cook on high for 2 hours.

add 2 cups water, carrots, celery, onion, tomatoes, paprika, salt, crushed red pepper. continue to cook on high for another 3 hours or until beans and vegetables are aldente.

serve over brown rice or whole wheat pasta.
