Chicken sausage, Vegetable, Laughing Cow Quinoa

2 cups dry quinoa4 cups chicken broth1 Tbsp olive oil2 Tbsp minced garlic2 medium onions, chopped16 oz mushrooms, sliced1 zucchini, chopped1 yellow squash, chopped6 bistro sensation habanero jack chicken sausage links, sliced6 wedges light laughing cow (any flavor)
Bring quinoa and chicken broth to a boil. Cook according to directions on quinoa box.
Saute onions, mushrooms, garlic, zucchini, and squash in olive oil until tender. Add chicken sausage and saute until heated through. When quinoa is cooked, add laughing cow wedges and mix thoroughly. Add quinoa/laughing cow mixture to vegetable/chicken sausage mixture. Makes 13.5 1-cup servings
