Orange Chicken (Trillium1204)

4 (5-ounce) boneless skinless chicken breast, cut into 1/2" pieces1 cup mandarin oranges in light syrup1/3 cup orange juice (PC Blue Menu 50% reduced-sugar)1 teaspoon olive oil1 tablespoon soy sauce (VH)1 tablespoon honey2 teaspoons granulated sugar2 teaspoons (zest of 1 orange)4 cloves garlic, minced 1/2 teaspoon cornstarch1 1/2 tsp red pepper flakes (to taste)1 teaspoon pepper, to taste
In a small bowl combine orange juice, soy sauce, honey, sugar, orange zest, ginger, cornstarch and pepper flakes. Set aside.
Heat olive oil over med high heat, add garlic cook 30 seconds. Add chicken, sprinkle with pepper, cook for 4-5 min or until no longer pink in center. Add juice mix & mandarin oranges , cook until thickened stirring constantly, about 1 min.
Serve over rice. (not included in calorie total)
