Quinoa Cranberry and Cashew Salad

Ingredients
Quinoa 1c. dryCashews 1/2c. halved or coarsely choppedDried Cranberries 1/4c.Sunflower Oil 2 tbsp.Parsley 2 tbsp. mincedMint 2 tbsp. minced
Directions
Cook Quinoa according to instruction
Let cool for 5-10 minutes and then fluff with fork
Add all remaining ingredients.
Add salt to taste (doesn't need much).
Refrigerate
