Morrocan Style Meatballs with vegetables

Ingredients
600g ground lean beef1 medium onion, chopped4 small cloves of garlic, chopped2 tsp Coriander seeds, ground2tsp Cummin powder500ml Tomato puree1 Zuchini large, cubed2 small Carrots, sliced100g Green beans, sliced1 tsp chicken stock powderSalt and Pepper to taste
Directions
Cook half the onion and 2 of the garlic cloves in a little olive oil, add half the coriander seeds and cummin powder. Cook until soft. Add cooled mixture to ground beef with a pinch of salt and pepper and mix thoroughly. Form into balls and place on a baking sheet, cook in a hot oven for 10-15mins.
Cook remaining onion, garlic and spices in a little more olive oil. Then add the pureed tomato with some chicken stock powder. Add carrot and zuchini and cook for 10mins. Then add the meatballs and green beans and cook for another 10mins. Season to taste and serve with cous cous or mashed potato. Makes approx 6 1 cup serves
