Ingredients
4 boneless, skinless chicken breasts (4 oz. each)4 medium potatoes, sliced4 tsp. taco seasoning mix1 cup salsa1 c. Kraft 2% shredded cheddar cheese
Directions
Place sliced potatoes in the bottom of the crockpot. Put chicken on top of the potatoes and sprinkle with the taco seasoning mix. Pour salsa over the top of it.

Cover and cook on low for 8 to 10 hours.

Sprinkle 1/4 c. of cheese over each serving just before eating dinner.

    It was good, but I will probably skip the salsa. I felt that it over powered the meal. And I had to add water because the potatoes were getting dried out. But in all, the meal was good. - 1/27/09
