Apple Chicken Salad Sandwich

Ingredients
1/2 cup of leftover chicken, cut up1/2 an apple, diced1/2 plum, diced1 stalk of celery, dicedGrey Poupon, or any dijon mustardSplashes of cider vinegar, about a tsp (white wine vinegar works well too)2 slices of thin-sliced rye bread2 leaves, green leaf, or any kind of lettuce you prefer, 3 -4 thin slices red onion
Directions
Toss all ingredients except bread, lettuce, and red onion together in a bowl. Spread mixture across one piece of bread (a lot will fall off, this is a sloppy sandwich.) Top with lettuce and onion. Eat up whatever falls off the bread with a fork. Enjoy! :-) I may add something creamy to the mix next time, like nonfat plain yogurt...in lieu of mayo. Definitely needs something to hold it together more.
