Easy Black Bean Cakes

Ingredients
Directions
1 can black beans (rinsed & drained) or 1.5 cups cooked beans(calculated using COOKED beans- not canned)1 egg1/4 c. chopped onion1 tsp cumin1 T. coconut oil (or other oil)Salt & Pepper to taste*Sprinkle of chili powder (optional) to taste
Mash beans with all ingredients except oil. Form mixture into patties. *(I spooned mixture into piles in the hot oiled pan and then flatted into patties as they cooked, as forming uncooked mixture to patties didn't seem feasible and was very messy.)
Heat oil in skillet, and fry bean cakes for five minutes per side.
Enjoy warm or cold, with salsa and/or sour cream.
*NOTES: I used a food processor to pulse the mixture just a little, with chunks remaining. I had trouble getting my "cakes" to hold together when I made these into 4 "larger" patties. Flipping them in the pan was a challenge, and they flopped and fell apart a bit. However, I will try these in SIX cakes next time and hopefully they'll hold together better. They still taste great, even crumbled!
