Fennel Crused Pork with Green Bean & Olive Salad

4 x 240g pork cutlets1 clove garlic, crushed1 tsp dried chilli flakes1 tsp fennel seeds, crushed2 Tbl olive oilSea salt & fresh black pepper300g mixed cherry tomatoes, halved300g green beans, blanched & sliced lengthways200g mixed olives1 cup basil leavesBalsamic glaze to serve
Please the pork, garlic, chilli, fennel, oil, salt and pepper in a bowl and toss well to coat. Heat a large non-stick frying pan over high heat. Add the pork and cook for 5 minutes each side or until golden and cooked through. Set aside.
Place the tomatoes, beans, olives and basil in a bowl and toss to combine. Divide the salad between plates, top with the pork and drizzle with balsamic glaze to serve.
