Black Quinoa & Blueberry Pudding

1 cup Black Quinoa,1 Pint Blueberries, fresh1 cup coconut milk, light - Trader Joe's 1 can = 5 svgs, 1 cup 2 % milk1 1/2 cup water1 large Egg, fresh,6 pkt Spenda (packet),
1. Rinse quinoa in running water. Place in sauce pan with 1 1/2 cup of water and cook according to directions on package. until tender, about 20 minutes.
2. While quinoa is cooking, put milk, coconut milk, egg and Splenda in pan and heat until egg thickens the mixture, stirring constantly.
3. Add quinoa to milk mixture, stir in washed blueberries.
4. Chill and serve.
5. Make 6 3/4 cup servings.
