Veggie chicken chili

1 green pepper, chopped1 red pepper, chopped1 large onion, chopped2 jalapenos, chopped2 15 oz cans black beans2 14 oz cans diced tomatoes16 oz grilled chicken - cut into 1" pieces1 T canola oil1 T chili powder1 t cumin1/2 t salt1 1/2 C water1 C frozen corn
In 4 quart saucepan, heat the oil over medium heat. Cook the onion, peppers, garlic and chiles 5-7 minutes until tender. Stir in beans, tomatoes, water and spices. rudeuce heat, cover and simmer for 30 minutes, stirring occasionally. Stir in corn and chicken, cook 5 minutes longer (uncovered).
May top with cheese, cilantro, sour cream - but these calories are not included in the total.
