Almond Orange Chicken Salad

Ingredients
2 boneless skinless chicken breasts1 c. cooked brown rice1/8 c. almonds, slivered1 orange, peeled sectioned, chopped1 apple, cored, chopped1/2 sweet onion, chopped1/2 green pepper, chopped1 c celery, chopped2 Tbsp. low fat mayonnaise2 Tbsp. low fat sour cream1 tsp. curry powder1 Tbsp. soy sauce
Directions
Boil chicken in water until done. Drain and chop into 1" pieces. Steam rice until al dente. Chill both chicken and rice while assembling salad. Cut up sectioned orange into smaller sections. In a large salad bowl combine oranges, chopped apple, onion, green pepper and celery and almonds. In a small bowl mix together mayonnaise, sour cream, soy sauce, curry powder until smooth.
When chicken and rice are well chilled add to vegetables. Pour dressing on top and toss gently.

Serving Size: Makes two large servings or three smaller servings
