Introduction
Cous Cous is a very versatile side dish. It lends itself well to people that have had Bariatric Surgery. You can put just about anything in this salad that you like. This cold version is light and can stand alone or beside any other side salad. For this dish I serve it cold. However it is great along side any main protien you like. Ingredients

Following directions on the box or package, boil water on the stove and add seasoning package
Remove from heat, cover and let stand for five minutes. Fluff with fork and refrigerate until chilled.
Add the fresh red pepper, cucumber, scallions, and shredded carrot and Italian dressing and mix to coat.
Add more dressing to suit your taste. (optional)
Tips
For this nutritional information I used the boxed kind of Cous Cous with a flavor packet included. You can buy them in many different flavors but if you would like to cut the calories and sodium down choose a plain Cous Cous instead. It is prepared much like rice but quicker.
Directions
Cook the Cous Cous according to the instructions on the box or package
Then cool in fridge until chilled
Add vegetables and Italian dressing
