Easy Mexican cornbread muffins

Ingredients
1/2 cup frozen corn1 package Jiffy corn muffin mix1 egg1/3 cup skim milk1 cup cheddar cheese1 jalapeno pepper
Directions
Preheat oven to 400 degrees. Grease muffin cups. Mix all ingredients together. Batter will be lumpy. Fill muffin cups half full. Bake 15-20 minutes or until golden brown.

    I'm pretty sure there is an error in the calculations for the jiffy mix in this recipe. I believe that only 1 serving is accounted for when it should be 6 since the whole box is being used which would pretty much double all the nutritional values. - 2/12/14
