* Coconut, raw, 1 cup, shredded (remove) * *Agave Blue Light Syrup 1 tbsp=60cals(21) Aunt Pattys Organic, 8 tbsp (remove) * *Pearl Tapioca, .5 cup (remove) * Vanilla Extract, .5 tsp (remove) * Egg Yolk, 2 large (remove) * Salt, .25 tsp (remove) 3 - 3/5 cups water
Soak tapioca pearls in water with shredded coconut.
Add egg yolk, salt, and agave, and stir over medium heat til boiling.
Turn heat to low, and stir often for 10-15 minutes.
Add vanilla and let cool for 10 minutes.
