Chicken and Vegetable Green Curry

2 C broccoli - chop to your desire1 C caulifower - chop to your desire1 C cabbage - shredded2 C snap peas 1 Onion medium1 tablespoon Green Curry paste2 C coconut milk1.5 Chicken breasts, cut into strips or chunks3 C brown rice, cooked
Brown onions, mix in snap peas and cook until tender. Add chopped chicken cook until the chicken is done.
Mix in all chopped vegetables with 1 tablespoon of the green curry and two cups of coconut milk.
Cover and let it cook for about 15 minutes. (Cook until the vegetables are as you desire them.)
Serve over rice and chow down.
Serving Size: 1-cup rice with 1.5 cups of chicken/veggie mix
