Introduction

I found this in a "Fix it and Forget it Lightly" crock pot cook book I found this in a "Fix it and Forget it Lightly" crock pot cook book
Number of Servings: 6

Ingredients

    1 lb. baby carrots - or 4 carrots cleaned and sliced into chunks
    1 med onion, cut into wedges
    6 boneless, skinless chicken breast halves
    20-oz. canned pineapple chunks
    1/3 c packed brown sugar
    1 Tbsp. low-sodium soy sauce
    2 tsp. chicken boullion granules
    1/2 tsp salt
    1/2 tsp ground ginger
    1/4 tsp garlic powder
    3 Tbsp cornstarch
    1/4 c water
    3 cups cooked long grain rice- I used brown rice


Directions

Layer the carrots and onion in the bottom of the crock pot
Top with chicken
Drain pineapple, reserving the juice. place on top of chicken
Mix together the juice, brown sugar, soy sauce, chicken bouillon, salt, ginger, and garlic. pour over the top.
Cook on low 6-7 hours
Combine cornstarch and water.
gradually stir into slow cooker
Cook 30 minutes longer or until sauce is thickened
Serve over cooked rice.
Makes 6 servings of 1/2 cup rice and 1 piece of chicken with 1/2 c sauce.

    I love this recipe. I've used it a few times. I cut out the carrots add red bell pepper, bamboo shoots and water chesnuts. - 6/25/09

    that's great! Thanks! It was super easy prep (which is half the battle) and I used splenda Brown sugar and it turned out great. Kids, not a fan, but my husband and I liked it! - 10/23/08

    I'm just not impressed with this on any level. I followed the recipe to the T and found this to be a little too bland to go over rice. By itself it's good as opposed to ok but not something i would make again. I would, however, recommend this to someone who is a bad cook as they will think its good - 8/23/10
