Sweet Potato Breakfast Muffins

3 cups baked sweet potato3 cups oats1 cup oat bran3 eggs4 egg whites1/2 cup apple sauce1 cup crushed cashews1 cup craisins1/2 cup ground flax
Peel, cube and bake the sweet potatoes. When done, cool and then mash. Add the other ingredients and mix well.
Bake in the oven at 350F for 25 mins.
