Lauren’s Cranberry Granola Squares

2 1/4 cups Quaker Old Fashioned Oats1/2 cup Heckers 100% Whole Wheat Flour1/2 tsp. baking soda1/2 tsp. vanilla extract5 TBS. Motts Natural (no sugar added) Apple Sauce1/4 cup honey1/2 cup packed brown sugar1/2 cup Craisins (additions)
1. Preheat oven to 325. Grease an 8” x 8” pan.
2. Combine dry ingredients.
3. Add vanilla, applesauce and honey. Mix thoroughly until all ingredients are moist.
4. Add Craisins and mix well.
5. Press mixture into pan. (Use a spatula to compress mixture evenly in the pan)
6. Bake 18 to 22 minutes or until golden brown.
7. Cool 10 min, and then cut into 9 squares.
8. Cool completely before serving.
This recipe can be doubled for 9” x 13” pan.

I made these last night. I doubled most ingredients and used a 9x13" pan. I didn't double the brown sugar and will actually use molasses instead next time. They're just a bit too sweet for me, though plenty tasty as a treat. Added whole raw almonds and cut into 28 117-cal squares! Will make again! - 5/12/11
