Olive Oil/Chives Mashed Potato

Ingredients
6 small red potatoes2 T olive oil1/4 cup Darifree rice milk1 T red wine vinegar2 T chopped fresh chivesSalt and Pepper to taste.
Directions
Boil potatoes until tender. Drain. Heat olive oil and rice milk. Add to potatoes and mash. Add rest of ingredients.
