Bean burgers (or Mexican style falafels)

2-29 oz cans of cooked pinto beans, drained1 medium onion, finely chopped2 T garlic, finely chopped2 carrots, finely chopped or grated1 chaboya squash, finely chopped1-2 T cumin seeds and/or powder1 t cayenne pepper2 dried poblano chiles, rehydrated in 1/2 C water1/2 C cilantro, finely chopped1/2 C salsa1/2 C corn meal3 T olive olive (1T for sauteeing; 2 T for brushing the tops of the balls)
Serving Size: Makes 40 1-2 inch balls or patties.
- Mash drained cooked pinto beans. Set aside
- Chop all veggies and herbs finely. Saute.
- Add most of the corn meal and rehydrated polano chile with its liquid. Simmer until most of the liquid has cooked off.
- Mix with beans. Let the mixture cool.
- Form into balls using ice cream scoop.
- Brush with olive oil.
- Bake in 400 degree oven for 15-20 minutes.
- Serve like a burger, taco, or falafel.
