Southwestern Chicken Soup

1 lb chicken breast1 Tbsp oil1/2 onion 4 cloves of garlic, grated1/2 jalapeno, sliced smallchili powdercayennesalt (to taste)1/2 can cannellini beans1/2 can red kidney beans32 oz chicken stocklarge can diced tomatoessmall can of tomato pasteGreen giant frozen white shoepeg corn
Cut chicken into small chunks, season with salt & chili powder. Sauté chicken and onion in a pan, on medium heat, with oil until cooked. Slice the jalapeno very small and grate the garlic. Add both into pan and cook for 2 minutes. Add salt, cayenne, and chili powder to taste (i used i lot because i like it spicy)
Transfer the mixture to a large pot. Add the beans in, and let cook for about 5 minutes. Add the chicken stock (i used store bought), a large can of diced tomatoes, and a small can of tomato paste.
Microwave the green giant frozen corn for 3 minutes, then add into the soup.
Simmer soup for 20 minutes.
Serving Size: Makes 8 servings
