*Ancient Harvest Inca Red Organic Quinoa (1/4 cup dry), 1.25 cup (remove)*wegmans thai culinary stock, 2.5 cup (remove)Peppers, sweet, red, raw, sliced, 0.5 cup (remove)Scallions, raw, 0.25 cup, chopped (remove)Avocados, California (Haas), 1 fruit without skin and seeds (remove)Olive Oil, 1 tbsp (remove)*Lemon Juice, 0.5 lemon yields (remove)*Amy & Brian's all natural Coconut Juice, 0.5 oz (remove)Pepper, red or cayenne, 0.5 tsp (remove)
Cook quinoa in thai stock
Cool quinoa
Mix olive oil, lemon juice, coconut juice, cayenne, mustard, salt and pepper for a dressing
Chop scallions, bell pepper, and avocado and mix with quinoa
Toss with dressing
