Cream of Broccoli Soup

Ingredients
1 large onion chopped1 med Carrot sliced1 small stalk celery, with leaves1 clove garlic, minced3 cups fat free, low sodium chicken stock ('Imagine' organic)1/4 cup uncooked rice2 cups skim milk1/4 tsp salt (optional)Pinch Cayenne
Directions
In large saucepan, combine onion, carrot, garlic, celery and low fat-low sodium chicken stock. Bring to boil. Add rice, cook 15-20 min until rice is cooked. Add broccoli. Cook until tender, about 5/10 minutes. Puree in a blender/processor in batches. Return to saucepan. Add milk, salt (optional), cayenne. heat through. serve hot or refrigerate until serving time.
