Baked Oatmeal

Ingredients
3 C. Old Fashioned Oatmeal2 tsp. Baking Powder1/2 tsp. Cinnamon1/2 tsp. Salt1/2 C. Organic Sucanat (can substitute white or brown sugar)1/2 C. Unsweetened Applesauce1 tsp. Vanilla4 Egg Whites1 C. Skim Milk1 C. dried raisins, cranberries or blueberries
Directions
Preheat oven to 350 degrees. Spray 9" X 9" pan with non-stick spray.

Mix dry ingredients. In a separate bowl, mix the wet ingredients. Combine the wet and dry ingredients and stir. Fold in the dried fruit. Bake 20-30 minutes.

    I tried this recipe. I liked it. I only added a 1/2 cup of sugar and used state brothers brand egg whites. I also used 1 cup of Kirkland signature dried fruit (No added sugar). I think it had apples, apricot, prunes. - 11/4/13
