Ingredients
1 1/2 cup Splenda granular1 cup oil3 eggs1 3/4 cup flour1 tsp salt1 tsp baking soda1 tsp ground cinnamon1 tsp vanilla extract3 large apples chopped
Directions
Mix splenda, oil, and eggs. In separate bowl mix flour, salt,baking soda, and ground cinnamon. Mix with sugar (splenda) mixture. Add vanilla extract and apples. Bake in 9x12" greased and floured pan at 350 degrees for 45 minutes.

    I was afraid of 1 cup of oil, so I used 1/4 c oil and substituted 1/2 c applesauce and 1/4 c ground flax seed. The cake was very moist and not too heavy. - 4/10/09
