Shredded BBQ Chicken Sandwiches

Ingredients
2 tablespoons unsalted butter1/2 cup minced yellow onion1 cup ketchup2 tablespoons soy sauce2 tablespoons lemon juice1/2 teaspoon Tabasco SauceOptional: 2 teaspoons minced garlic (cook with onion) and 4 tablespoons BBQ sauce4 boneless, skinless chicken breast halves (approx 8 oz each)Cooking spraySalt & Pepper to Taste4 large sandwich rolls
Directions
To make the sauce: In a large sauce pan over medium heat, melt the butter. Add the onion (and garlic) and cook until soft, 3 to 4 minutes, stirring occasionally. Add the remaining sauce ingredients. Stir and cook for about 3 minutes.

Lightly brush or spray the chicken on both sides with oil and season with salt and pepper to taste. Grill over Direct Medium heat until the meat is firm to the touch and no longer pink int he centre, 8 to 12 minutes, turning once. Remove from the grill and let rest for 3 to 5 minutes. Shred the chicken, add to the sauce, and heat through over medium heat.

Grill the rolls until lightly toasted.
