Ensalada Rusa Valeria

Ingredients
Potato, fresh, 3 serving Carrots, raw, 2 medium Egg, fresh, 1 large Egg white, 1 serving Green pees, 1 cup Mayonnaise, regular (mayo), 1 tbspCider Vinegar, .5 cup Yellow Mustard, 1 tsp or 1 packet Black pepper to tasteDry Parsley, 1tbsp
Directions
Start boiling eggs and carrot cutted in small pieces. After 3 or 4 min. add potatoes also cutted in small pieces. Add salt and a spoon of vinagre to the water.
Once cooked, rinse to stop the cooking.
Peel and cut in pieces one hole egg and from the 2nd one, remove yolk and discard.(to reduce cholesterol)
In a bowl, mix, mayo, mustard, black pepper, parlsey. Mix well and add to salad, mixing carefully.
