Tahini Lemon Rice and Beans

Ingredients
Tahini Lemon Sauce:1/4 cup soy sauce1/4 cup tahini2 tbsp lemon juice2 tbsp rice vinegar2 tbsp vegan Worcestershire sauce2 tbsp water2 tbsp olive oil1 cup brown riceTahini Lemon Sauce (from above)vegetable oil for sauteeing1 bunch kale, deveined and chopped1 can black beans (rinsed/drained)6 ounces seitan cut into strips1 carrot, shredded
Directions
Start the brown rice in a rice cooker or pot.

Combine the sauce ingredients in a bowl and whisk together. Set aside.

Heat veg. oil in a skillet over medium heat and add the kale. When the kale starts to wilt, add the beans and seitan and heat through.

Add all of the sauce, stir, and turn off the heat and cover until the rice is finished cooking.

Add cooked rice to the pan and toss to coat. Serve with shredded carrot on top.
