New Year's Black-Eyed Peas with Country Ham

black eyed peas dry, 2 cups (16 0z bag)Country Ham, 8 oz (the hock from the country ham or a large ham hock)Onions, raw, 1 cup, chopped1 Tablespoon course ground black pepper6 cups of water
1. Pick threw peas, cover with 4 inches of water and soak overnight. If you don't have time just go to step 2, they will just take longer to cook.
2. These can be cooked in a crock pot or on top of the stove.
3. Rinse, if soaked and add 8 cups of fresh water.
4. Add ham hock, pepper and onion.
5. Cook on low simmer until tender. 2-4 hours.
Serving Size: Makes 8 one cup servings
