Low Carb Spinach Mushroom Quiche

Ingredients
4 eggs or equivalent egg substitute1/2 cup fresh mushrooms, sliced1 cup fresh spinach, cut into strips1 cup lo-fat cottage cheese1/2 cup lo-fat mozzarella cheese1/4 cup soy Parmesan cheese4 green onions, chopped1 clove garlic1 tsp. steak seasoning salt
Directions
Preheat oven to 350°F.

Combine all ingredients in a large bowl, mix well.

Spray a 9 x 13-inch glass baking dish with cooking spray. Pour contents into pan.

Bake for 45 minutes or until set.
