Drew's Nutty Apple Muffins

1/2 cup Dried Apples, chopped (about 53 g)1/2 cup Gluten-free baking mix (Pamela's Baking and Pancake Mix) 1/2 cup Almond Flour1/2 cup Trader Joe's Partially Defatted Peanut Flour1 tsp Cinnamon1 tsp Vanilla Extract1 large Egg1/4 cup Grapeseed Oil2 Tbsp Erythritol3/8 tsp Stevia3/4 cup Water
Preheat oven to 350.
Mix together dry ingredients in a bowl. Mix wet ingredients separately, and then add them into the dry ingredients. It should make a thick batter-- you may need to adjust the amount of water.
Scoop 2 tablespoons of batter into each cup of a lightly sprayed muffin pan. Bake for 25 minutes until golden brown.
NOTE: Sweeteners can be replaced by 1/2 cup sugar or Splenda or just 1/2 tsp of powdered stevia extract.
