Banana Almond Pancackes

1 ripe Banana2 large Eggs1 tbsp Natural Almond Butter2 tbsp Soy Flour1/4 tsp Cinnamon1/2 tsp Vanilla Extract1/4 tsp Baking Soda2 tbsp Butter (used for cooking)
Preparing the batter:
1- Mash up the banana
2- Mix in the eggs and whisk
3- Add the almond butter, cinnamon, vanilla extract, and baking soda and whisk
4- Add the soy flour and whisk until there are no lumps in the batter
Frying:
On a low heat melt 1/2 tbsp butter in a pan and pour in 1/4 of the mixture, be gentle with those pancakes and make sure you cook them on low and let them brown before you flip them, this will give them a chance to firm up a bit.
Serving Size: makes 4 pancakes
