Apple Pork Tenderloin

1 - 2 lb pork tenderloin2 Tbsp. Aplle juice concentrate1 Tbsp water1 tsp vanilla extract1 cup confectioners sugar1/2 tsp salt1/4 tsp black pepper
Preheat the oven to 350 degrees. Line a 7 X 11 baking dish with aluminum foil, then coat with nonstick cooking spray.
In a medium bowl, combine the sugar, apple juice concentrate, water, and vanilla. Mix well and set aside.
Season the pork tenderloin with salt and pepper and place int he baking dish. Spoon half of the sugar mixture over the pork and roast for 45 minutes. Remove from the oven and spoon the remaining sugar mixture over the tenderloin. Roast for 5 to 10 minutes or until no pink remains. Cut into 1/4 inch thick slices and serve with the sauce from the pan.
