Roast Beef and Goat Cheese Salad

Ingredients
2 small heads Boston lettuce12 ounces deli sliced roast beef1 large beefsteak tomato, cut into wedges1/2 red onion sliced4 ounces soft goat cheese crumbled1/4 cup extra virgin olive oil2 tablespoons balsamic vinegar2 teaspoons dijon mustard
Directions
Divide the lettuce, roast beef, tomato, onion, and goat cheese among 4 bowls.
In a small bowl, whisk together olive oil, vinegar, and mustard. Drizzle over the salad.

Note: A serving is actually only 350 calories as I had to sub some ingredients in the calculator.
