Tomato, Garbanzo, Basil & Sage Pasta Sauce

Ingredients
1 Tbs. olive oil1 cup onion, chopped10 cloves garlic, crushed or minced3 large stalks celery, diced2 cans diced tomatoes1 can diced tomatoes, pureed1 large bay leaf2 cans no salt added garbanzo beans, drained and rinsed2 Tbs. fresh basil, chopped1 Tbs. ground sage (or 2 Tbs. fresh sage, chopped)2 tsp. fresh ground black pepper1 tsp. salt
Directions
In a large sauce pan over medium heat, saute onions and garlic until they begin to soften, then add the celery. Saute for another minute.

Add the two cans of diced tomatoes, and the 1 can of pureed diced tomatoes. I puree mine with a hand blender, but if you don't have one you can leave the tomatoes in the diced state, your sauce will just be chunkier and less saucy.

Add the bay leaf and the rinsed and drained garbanzo beans then simmer for 10-12 minutes to reduce the liquid some. Stir occasionally to prevent sticking and burning.

After the sauce has reduced and thickened, add the basil, sage, pepper, and salt. Simmer for an additional minute.

Serve over pasta with either Parmesan, olive oil drizzle, and crushed red pepper flakes if you like. (or all 3!)
