Taco Soup

Ingredients
1 can whole kernel corn, drained1 can ranch style beans (or pinto beans)2 cans Rotel drained (or not if you prefer heat)1 lb lean ground beef1 med onion, chopped2 cups water1 packet of taco seasoning1 packet of Hidden Valley ranch seasoning
Directions
In soup pot, brown ground beef on medium-high heat, add onions to saute until soft and clear. Add all other ingredients. Bring to a boil and then turn heat to medium. Simmer for at least 15 minutes. The longer, the better! Enjoy with a dollop of sour cream, cheese, and some tortilla chips or cornbread!

You can change up the recipe by adding different veggies, as you choose. I often use two cans of beans and 1 can of rotel. Quick, easy, and great on a cold evening!
